| Back in the Saddle Brew |
| This is a beer named for my first attempt at brewing after a 5 year hiatus. The recipe is of my own creation and is intended to be modeled after a basic British Pale Ale. It uses light malt for the foundation of the recipe with a little amber malt for added color and body. Fuggles hops are used for bittering and Kent Golding hops for aroma. |

- 4 lbs Muntons Light Dry Malt Extract
- 2 lbs Muntons Amber Dry Malt Extract
- 2 oz Fuggles hops
- 1 oz Kent Golding hops
- 50 mg Wyeast British II liquid yeast
- 5 gallons Poland Springs bottled water
- 1 cup corn sugar

Preparation:- In 1 gallon of water, stir in malt extract and bring to boil.
- 1 oz Fuggles hops in boil 50 minutes.
- 1 oz Fuggles hops in boil 10 minutes.
- 1 oz Kent Golding hops in boil 2 minutes.
- Remove from heat and place pot in ice bath and cool to room temperature.
- Transfer to primary filled with 4 gallons of water.
- Pitch yeast and aerate well by whisking.
- Ferment according to schedule and then siphon off to holding bucket.
- Prime with corn sugar and bottle.

Results: Nice color and body but a little too carbonated. Tastes ok, next time I'll try a different yeast and maybe only 1/2 to 3/4 cup sugar for priming. |
